You should have no problem finding work on the road, seasonal resorts might well be best for both parties.
I’d also not be surprised if in a housing challenged resort you could make significantly more and have much less overhead. You might even like the place enough to stay!
You can make your own cables. There is a bit of a learning curve and equipment costs.
I have a multiple die crimper, but I’d need another for larger cables. I might try a hammer for those.
Whether to pursue that path should depend on your future plans.

You’d think Jackery would be more precise in their documentation, if not design, for this common use case. You might try a test run before going to the trouble of running the wiring. A fuse tap might also work if you can find the right circuit. That would be a simple job for a mechanic that...
You can a pretty good kit from Ryobi for like $300 from Home Depot. There are other brands. Check the warranty for your use test. I believe they have a 12v charger too.
The pavilion model comes with walls included that roll up over the screens. You can also purchase the attachable walls separately.
There are two manufacturers currently.
The thermal mass of a battery is such that a brief dip below freezing won’t be a problem. A temperature controlled BMS like the overkill will protect you in the rare exceptions.
Living space, as above, is even better.
I think a lot of folks are looking at doing this, hopefully we'll have quite a few good 'neighborhoods' to consider over the next few years. Keep your privacy in the community a bit, but not too much - such as with potential good neighbors.
