Sitting by the fire waiting for my wife to get to camp. Pulled out my pocket knife and made this!

no just something from the burn pile. Gave it to a fellow camper

Yes, you could sell them. Won't get rich, but it would save you having a bunch of unused carved sticks lying around. 

One of my knees is getting a bit wonky, I'm thinking about getting a walking stick...

There is an Etsy store with similar carvings on walking stick he is selling them for $60.00 to $80.00 each. He has some other carved products. Almost 3,000 sales in his Etsy store. So yes you can make and sell them. You need nice looking wood, that is important as well as an interesting subject.
 
Can you make miniature brooms? People including me hang them on the wall for decoration. I love those face carvings and yours are great.
 
Be aware that the dry desert air causes wood to split. Several of my walking sticks split after a few seasons in the dry air.
